This recipe is so easy, I cannot believe it was as easy as it was. I am not a big meat eater or meat cooker, so I tend to shy away from cooking meat often. Not only do I not enjoy meat as much as veggies, but I tend to overcook meat in fear of food poisoning.
I have been craving BBQ for a very long time, and it’s hard for me to cook BBQ since I don’t have a grill. But hey, I tried and succeeded!
You will need the following ingredients: paprika, salt, black pepper, cayenne pepper, garlic powder, honey, red wine vinegar, olive oil, sweet onion, and 3 pounds pork shoulder.
Cut the onion in half and place it in the slow cooker. Place your meat over the onion.
Next, mix 2 tablespoons of paprika, 2 tablespoons of salt, 2 teaspoons of black pepper, 1 teaspoon cayenne pepper and a pinch of garlic powder (or more if you like) to a mixing bowl and mix the dry ingredients. I cut the salt in half and added a bit of garlic salt instead and didn’t add the garlic powder.
In a separate bowl mix 1/2 cup of honey, 1/4 cup of red wine vinegar, and 3 tablespoons of olive oil together until they are well combined. Mix in gradually the dry ingredients into the oil based ingredients until a well-integrated sauce is made.
Place the sauce over all of the meat. Turn the cooker on low and cook 6-8 hours.
At 6 hours shred the meat and place back in the slow cooker for a while longer for the sauce to penetrate the shreds.
I bought Kaiser rolls to make sandwiches with. I used the hot sauce as a spread on the sandwich and topped with meat. I also made BBQ beans (from a can) on the side.
In addition, I made a vinegar base broccoli slaw. Some red vinegar, sugar, honey, and olive oil as the slaw dressing. It was very light and I just added it all together until I liked the taste of the sauce. So, make it for how you see fit.
Note: This was delicious, but super fatty. Before I put the meat away in the fridge, I ladled off the fat layer that rose to the top of the bowl. Kind of gross, but it is a fatty meat to begin with so isn’t surprising, just be mindful!
