My aunt gave me this recipe and it has veggies in it, so I just had to cook it ASAP!
I was actually surprised as to how easy it was to make. Very simple, yet delish!
Ingredients: Eggplant, tomato, Parmesan cheese, cilantro, sliced mushrooms, rice, onion, and basil.
1. Slice the eggplant and tomato in thin slices (about 1/4″)
2. In an 8″ pan coat the bottom with a light layer of olive oil. Place 2 tbsps of onion, basil, and salt and pepper on the bottom.
3. Place 1/2 cup of rice in the bottom of the pan and spread evenly. Top with mushrooms (as much as you like).
4. Layer the eggplant and tomato slices on top of the rice.
5. Sprinkle cilantro on top of the veggies.
6. Pour a cup of boiling water on top of the rice and veggies.
7. Heat the oven to 375 and cook the mix for 20 minutes.
8. Top lightly with Parmesan cheese and place back into the oven until the rice is cooked and cheese is brown.
This is very healthy and will make you feel great! Enjoy!
